Country French Tart
1 cup heavy cream
2 tsp salt
½ tsp pepper
Pinch ground nutmeg
½ cup drained, pitted, roughly chopped kalamata olives
2 roasted red peppers, drained and roughly chopped
4 oz crumbled goat cheese
2 tsp chopped fresh basil leaves
8 fresh basil leaves for garnish
2 tsp chopped fresh parsley
1 tart shell*
Preheat the oven to 375°F.
Whisk the eggs and cream together in a large mixing bowl. Add the salt, pepper and nutmeg and whisk to blend.
Put the olives, roasted red pepper, goat cheese, basil and parsley into the prepared tart shell and pour the custard over the filling. Bake the tart until the filling is slightly puffed and golden, about 40 minutes.
Remove from the oven and let cool 10 minutes before serving. Garnish with fresh basil leaves and serve.
*You can make your own tart shell with pastry dough or simply purchase prepared pie dough from the supermarket.
