Fresh Herb Chop Rub

  • 4 pork chops
  • Thyme oil (see thyme section)
  • Salt and pepper
  • 2 Tbsp finely chopped fresh thyme leaves
  • 2 Tbsp finely chopped fresh basil leaves
  • 2 Tbsp finely chopped fresh chives

 

Preparation

Preheat the broiler or grill.

Trim fat from the chops. Lightly coat each side with thyme oil, then season with salt and pepper. In a small bowl, combine the oregano, basil and chives, then spread on cutting board. Press chops into herbs to coat each side.

Grill or broil in oven until cooked through.
