Basil Tip # 4 — A handful to cook and a handful for garnish

Whether your favorite pasta sauce is your grandmother’s recipe from the old country or is made “fresh” from a jar, basil adds depth and a bit of sweet spiciness to tomato sauce.  At our house, we crack open a jar of Ragu’s best, then stir in a handful of basil just a minute before serving.  Adding basil at the last moment captures all of its wonderful flavor.  Then, for good measure, roll a few leaves together then thinly slice them (the style of preparation is known as “chiffonade”) and sprinkle on top of the hot sauce as you plate up the food.  It looks best on top of the Parmesan!
