½ cup orzo (rice-shaped pasta), cooked and drained
2 tsp olive oil, divided
1 red bell pepper, diced
¾ cup sliced green onions
½ tsp lemon zest
1 Tbsp lemon juice
¼ tsp salt
¼ tsp pepper
¾ lb large shrimp, peeled and deveined
¼ cup chopped fresh basil leaves

Preheat oven to 450°F.
Place the cooked orzo in a large bowl. Stir in 1 teaspoon oil and next 6 ingredients (through black pepper).
Place the orzo mixture in a baking dish coated with cooking spray. Combine shrimp and basil. Arrange shrimp mixture on orzo mixture. Cover baking dish with foil and bake for 25 minutes or until the shrimp are done. Peel
back the foil. Drizzle with 1 teaspoon oil and serve.
