Chilled Vegetable-Basil Soup

INGREDIENTS

1 Tbsp olive oil
2 tsp oregano
2 garlic cloves, minced
1 (46-oz) can tomato juice
1 cup fresh basil leaves, chopped
2 tsp hot pepper sauce
¼ tsp salt
½ tsp pepper
2 cups finely chopped cucumber
1 cup halved cherry tomatoes
¼ cup chopped red onions
Chopped fresh basil leaves for garnish

Preparation Serves 6
Heat oil in a large saucepan over medium heat. Add oregano and garlic; cook 1 minute, stirring frequently. Add juice; bring to a boil. Reduce heat; simmer 2 minutes.
Remove from heat; stir in basil, hot pepper sauce, salt and pepper. Cover and chill 6 hours. Strain mixture through a sieve over a bowl; discard solids. Stir in cucumber and remaining ingredients.
Garnish with fresh basil leaves and serve immediately.
