Curly parsley, the herb everyone knows

Who hasn’t chopped some parsley to add a touch of color and fresh flavor to a dish? It’s one of the many herbs that is ALWAYS better fresh, and you can use it in almost any recipe.  Consider some other, less familiar uses of parsley:  pesto made with parsley instead of basil,  for instance, is a great change-of-pace, or a dollop of herbed butter made with parsley (use a fork to blend the chopped herb into softened butter) is always welcome on  steak,  fish, or just about any cooked vegetable, and is an elegant topping for an omelette. Parsley is said to be an excellent breath freshener.
