Egg Salad Sandwiches with Tarragon

INGREDIENTS

8 large, hard-boiled eggs

½ cup mayonnaise

1 green onion, finely chopped

1½ Tbsp finely chopped fresh tarragon leaves

2 tsp white wine vinegar

Salt and pepper

12 slices bread or 6 sandwich rolls

3 cups fresh salad greens

Preparation:  Makes 6 sandwiches

Peel and dice eggs in a medium mixing bowl. Add mayonnaise, onion, tarragon, vinegar, salt and pepper to taste, and mix thoroughly. Assemble sandwiches by spreading mayonnaise on half of the bread slices. Top with a portion of salad greens. Top other half of sandwich with a portion of mayonnaise and egg salad and place egg side on top of greens.
